I supposedly am sorting the according to the Name (Title) Column by default.  The order is alphabetical, of course . . . only after pulling my hair out because the order was not alpha, in Download or Library view--but the order WAS fine in the File tab.  I realized the sorts are according to file size! Even though the little black triangle is in the Name column. AND when I click on the Size column, the order does not change from ascending to descending.  So...something is wrong with the sort. It has not always behaved like this. I have restarted the program AND the PC.

How do I kick the tires on this thing?

Things work for me - do you have any torrent in a error state (red text?) - just a wild guess that it could be breaking things.

Check out the console view (Tools->Options->Console, you'll need to turn logging on first) to see if there are nay errors
There are no red indicators anywhere.

I went to Console (Tools/Console [no Options step] ).  I don't know anything about the section, or logging. As of this writing, don't have the opportunity to research it.  Is there a place I can double check or set the Default Sort By column, rather than the little black triangle pointing down at the right of the Name Column now?

If clicking on the column headers isn't sorting correctly then something is broken - there is no user settable 'default sort order' - Vuze will remember the latest sort order across restarts. Logging is enabled via Tools->Options->Logging, just check the 'enabled' box - you will then see any errors that subsequently occur logged to the console.
