Broken Options menu

Don't know how this happened and have no idea how to fix it.
Any suggestions would be fantastic.

Weird - is there anything in your 'debug.log' file when you open the options?

Follow the instructions here: https://wiki.vuze.com/w/Submit_Debug

and select 'manual send' - this will create a .zip file with all the log files in it - take a look at the debug_1/2.log files

What am I looking for inside of the debug_1.log file? I did not receive a Debug_2.log.
I followed the instructions on the debug. Do I just wait for a response?

If you selected 'manual send' then the debug.zip file is only on your computer, not sent anywhere. Look in the debug_1.log file for any errors - post the contents here if you want!
